Hey! it's little tricky to hide the pages from nav bar. Just use a plugin called pagemash install it and hide the pages which you don't want to appear on the nav bar. To access the page which is hidden you need to get the page name/id and give anywhere in the hyperlink to view the page. see sample here http://bputnews.com/ About the gallery I can make it for you please pm me.
