Do you know how to add/remove/modify footers (texts and links) on a Wordpress theme ?

Does it depend on the theme ?

Any issue with WP update when doing this ?

While accessing it from your admin area >> Don't forget to allow the writing permission to the Relevent file
    other way is that >>
    GO to your cpanel yoursite.com/public_html/wp-content/yourtheme/footer.php
Edit this file on your server or edit it on your desktop then upload it ..

If a user doesn't know what they are doing shouldn't they back up that file first seeing they could mess up their whole website?

Does wordpress have a backup option or are they assuming we all know html?

If it's the classic design then /public_html/wp-content/classic/footer.php
    Basically what Brain said.

They're assuming, so make sure you backup your file before editing.

It would be better to leave the footer links as a token of appreciation to the guy who made the theme, but at the end of the day, it is your decision.

Remove it only if the author of the theme allows it. If not you're on your way to flaming land. Bad reputation results.
