No you won't, just be sure to have a copy of your site on both the new and old server before you switch DNS so there won't be any down time.

great thought there . . . Haven't experience this one! I think there is no effect if you move to another server if you just do it on the process. Your site must be on the present server while prepare to the new one.

I've changed server lots of times without any problems.

Sometimes Im even lazy and forget to transfer the site after changing dns ;-)

Anyway, never had any problems in google.
Even after many days of downtime you wont be de-indexed, at least that's my experience.

You don't need to worry about the IP change.

But is your site going to be offline for some time?

If yes, then that can create some problems.

My site used to rank 1st in google, I then had to move to another hosting. My site was offline for more than 48 hours.

Because of this down time, I lost all my ranking in google, and today after almost 4 months, I am still on the last page of search results instead of first position :(

Agreed. This is assuming however the domain name and URL structure won't change. Make sure to allow the site live on both servers for 72 hours after changing your name servers.
