Very simple- 80% of searches are done through Google. Therefore, everyone wants to get a slice of that huge potential traffic.
Google is the market leader. Just like majority of the software is developed for Windows so majority of the SEO is done for Google. Besides, google, in my opinion, is very systematic in its working unlike msn and yahoo which is why sites can be relatively easily optimized for it.
I saw a recent graph which gave Google 49.6% of the search engine market share Yahoo was like 23%, followed then by AoL, ASK, and a bunch of others with minimal shares. In the end, Google is the king. Work to get in its favor and the rest will follow

Traffics that are coming from Google are more targeted compared to other search engines. In other words, you could be making more money form Google since it would allow you to get some targeted visitors and thus you can sell anything.
