If I put the background as a jpeg image which is entirely white and have a small amount of white text (hidden) do you think google would find it?

Yes, they see your raw html code, not your layout.

I think you are talking about a lite text image placed in the background of the site.... yes i think google can find it... i hope you are talking about search engines working and not of adsense

that's old. People stopped doing that in the 90's because search engines began penalizing people for it.

If you want to have text on a page that people don't notice, but the search engines do, I always put it down near the footer in a light grey...not so light that you can't see it, but just so it blends in with a white background better. It's not really noticeable at first glance, but it's not so light that it looks like I'm trying to do anything sneaky...(event though I am)

Just play it straight, you will be happier in the long run. Anything that you just discovered, has been done before, and most probably failed, which is why it is not practiced anymore.

    Black hat tips for you:

    1) if you have a blank white image, google cant penalize you for using white text over it. Google doesnt know if your image is white or black. If you image is black and you use white text, thats perfectly fine - so google cant penalize for something it doesnt know.

    2) Another way to hide keywords is the marquee code. Make the marquee size small and put keywords in there.

    3) Type text then get a div to cover it. (can be done by either using absolute position or negative margins)

Honestly, you shouldn't hide keywords. Its bad practice and doesnt help very much. Keyword density is only a small part of on page seo and doing stupid stuff like this just isnt worth it.

I think it would be better if don't hide the text. Even if you hide it google will sooner find this. Why don't you just create an interesting content and insert your keywords there but in a nice way which can't be seen as keyword spamming.

Don't do it. As Hersheys and other people have already said, the search engines WILL FIND OUT about it, and you will be smacked up against the side of the head with a concrete block for it (in other words, your site will be pulled from the index - or "banned").
