To be honest, I'm in the wedding niche (huge craze right now) and I started off at .30/click and have since been able to lower it to .22/click and am still getting just as many clicks as I had with the .30/click. Yes my ads are on the 2nd page of google, but for me that has been maxing out my budget almost every day (have found holidays and thursdays to be a little slow with traffic). Granted my budget is very small, as I haven't seen much sales yet (must be my landing page) however seeing that searchers are interested in my ideas is nice. Hope that helps

$5 / £2.50 for plastic pallets -- Outrageous. Its all dependent i guess, it will just keep increasing as SEO increases in demand and popularity.

It partly depends on the industry (i.e. conversion rates and popularity) Personally, I top out around $1.00-$1.25 a click. However, I have clients who have very specific keywords and industry (one is a document imaging company that produces its own software) they bid upto $5.00-$6.00 on certain keywords, but their conversion rates make it profitable. Basically because if someone knows the name of their software and/or product name exactly, they are probably going to buy it :)

exactly! Max. Bid doesn't mean anything without looking at the industry you are in and the product you are promoting. If your profit margin is $200/sale you can easily afford $2 per click. This is obviously different if you only have a margin of $10/sale.
