when creating a facebook fanpage, what do you say your business is? Facebook does not have wide various categories to choose from, sometimes none of the choices fit my purpose. What do you usually choose?

Usually, website. Because you should represent an entity (famous person/company/website/product).

If you don't have an actual company but a website, you can use the "Website" option.

Can you give me an example of such business where you can't find a category?

For example, if I want to create something like this "A Lion would never cheat on his wife.. but a Tiger wood.", what should I choose? By the way, the above is not my page.

That's precisely something that shouldn't be on a fan page. When you create a page, the 3 main categories are:
    1 - Local Business
2 - Company, product or organization
3 - Artist, band or public figure

If your business is not one of these, it shouldn't be made into a fan page. Those usually get filled by a random, unrelated selection and are just for fun, but no one can "represent" a topic, joke, idea, etc. Usually, those page still get along, but at first report of spam, you'll probably just get deleted. If you need a profile for business, it must be about an entity. And it must be to give news about that entity, avoiding any sales/product links. You can give news and talk with your fans/customer/etc. This might bring you awareness and business in return. You can also announce promotions (example: Name.com, giving promo codes for their domain registration/renewal).

Note that promotions should NOT be run ON the fan page (example: first reply to a post get...). That's against Facebook's rules. You can only announce a promotion that takes place on your website/place.

but if you are going to do it choose "website" - I think if you hit 10000 fans Facebook will want to "verify" that you are "real"....in which case you'll need a website lol
