What to do now?

    I’m having issues collect from an it client
    The past year or so I had to bug for payments and had to bank over 500 hrs to be paid when money allows.
    He decides that he can no longer afford my service and goes with a much cheaper one he asked me if I could do it for the same but after the recent trouble I was having even to collect current invoices I decided it was time to move on.
    I gave then the final bills they waited about two weeks and now claim in the same note at most they owe me is 1000 from the last invoice in fact he said that he should sue me for all the work the new guys had to do for their contract, which was just what I said would happen.
    I have no contract other then his emails approving the work and then shutting the work down when he got accomplished what he needed at the time. He has also agreed to pay the back hours in his email
    Since I started working is was always firefight and when I made recommendations to fix it up I was met with that would be nice but can’t afford that just now.
    I have told him in emails, that at best his system was stable and needed lots of work.
    I know I did the best I could with what he had given me to work with so anything he tries to say I did wrong I can defend. If needed.
    Will his emails be enough to win?
