These major Google index update occured on average every 36 days or 10 times per year. It was easiest be identified by significant changes in search results, and by an updating of Google's cache of all indexed pages.

Google dancing means, when you suddenly found your website in first page or 2nd page etc, in SERP. After some days you can’t found it in between 100 SERP rank.
Google dancing means your website's ranking fluctuation in the listing. This usually happened when Google used to update its index. Google dance is not vanished after recent caffeine update (in January 2011) So, you do not need to bother about it anymore.
