Adsense will approve any site from any niche that meets its guidelines and has UNIQUE and COMPELLING content.

"Unique" - does not just mean copyscape passed ... it means that the content is not just parroted from other sites and really is a unique and valuable contribution to the web.
"Compelling" means it is the sort of content that a searcher would really want in their search results.

The reason for the 6 month requirement from India is that this is where most of the new sites without unique and compelling content come from.

Just think of it this way,

Will you visit the site yourself if you were searching for whatever that is? If yes, then it is something adsense will approve, but remember that there are other terms of google to get accepted to adsense. Read through the terms and conditions

I think it's easier to ask yourself the opposite question, that is "which websites is adsense likely to disapprove of?"

A few examples might be hacking, porn and streaming.

Any site that meets the website quality guidelines and the TOS will get approved. Also don't go via the youtube route as are you aware you can only use that adsense on youtube and nowhere else? Just shows as blank spaces if you try using it on a self hosted site.

They usually disapprove tech sites especially from India and 6 months domain age is not an issue if your site has good, unique content and decent traffic. I have seen many people got approved for adsense without 6 month condition, you just have to get their trust on your site. I have seen many people making sites just for the money, well who cares but your site should provide visitors that worth and not something that tons of site does. It's a common sense that why would you like to go to a new site if there are other many and better site providing same thing. You can choose any niche that have low competition.
