Domain and Kim, I was. I have cooked French food since childhood, originally a self-directed apprenticeship of classic French technique (with a deep bow to La Technique and Jacques Pepin). My wife and I had the first French place in the Upper Peninsula of Michigan, that unfortunately did not make it. I miss the artistry, and my crew, but not the life and the worries over survival.
