BH is a simple game of chasing the bucks around, jumping like a loon from what is supposedly hot to what it supposedly hot, and burning everything in their wake, so they have to essentially start from scratch every time.

 

Blackhat uses "mischievous" methods of getting traffic/rankings in the search engines. They involve things like links wheels or sneaky link building practices. I've talked to some blackhat SEO people that make tons of money this why, but these days Google is pretty quick on banning sites that mess around.

Whitehat SEO, involves traditional methods of traffic like social networks, legitimate backlinks and consistent content submissions (unique content). In the long run, Whitehat methods will gain you good, consistent rankings without the risks involved in blackhat methods. Although honestly, some blackhat tricks can make quick money.

 

As simple as white hat is done organically while black hat is the other way around.
