Event tracking is actually what when a visitors fills your inquiry form and submits it. You might have already put a code on that for.
This provides us some basic information like the visitors location , source of medium, is it is unique visitors etc

Lol, why don't you visit the google's event tracking product official website and read in detail.

Even though, i can briefly say that it helps you track the subscribers/form fillers geographic info etc.

Event tracking (Google Analytics feature)allows you to track events (pdf download, link to video) on your website .
-Set up tracking on your site refer tracking sites
-Call the _trackEvent() method in the source code of a page object, widget, or video.
    _trackEvent(category, action, opt_label, opt_value).

Include this code and google will register the event under category ,action and attributes , will increase the credibility of your post and site .
