    My ideal assistant would walk over hot coals to do what I needed. Easy enough to test.

    They would also take a bullet for me. Also easy to test, but a little counter-productive.

    Ask them to write an essay for you. Perhaps two or three pages long on a topic of your choice, not theirs. Give them a time limit, perhaps a half hour.

    Read the essay and you will easily discover if they can spell, think creatively, produce under pressure, and express themselves well.

    Give them a complex cofee request and see what they can do ;)

    But really... I think some type of problem solving task would work great.
