It all depends on how often Google's bot visits your site.

The spiders won't be able to crawl your page, eventually you will lose your ranking in search engines

Nothing really special will actually happen, even if a downtime period was long enough. Spiders will come back when you're up and running again.

    hi,
This unfortunate event got me thinking about what effect downtime can have on SEO. First off Downtime means spiders and more importantly visitors can not get to your website. Google will drop your pages from the Google index if your pages if your site is down often enough.

I don't think one short outage should matter too much.

If google is regularly finding that your site is down then the ranking will suffer.

That is why server uptime is very important. If the site is down for long period, that will have an effect towards your search engine ranking.

Can you shut the website down in increments over a period of several days and complete the work you are trying to get done?

Depends on the volume of google bot traffic and human visitors coming from google searches.
Your site have to be accessible at least 99.95% of the time. Otherwise google can even remove it from the index.
    Do the math: 86400 * 0.0005 = 43.2 seconds per day
    43.2 * 7 = 302.4 sec. = 5 min. per week
    43.2 * 30 = 1296 sec. = 21.6 minutes per month

It depends on if your site is crawled while it is down. Also how often it goes down. If i has a lot of down time it will be a negative factor in your rankings.

it depends on when your server is down/how long and when the bot crawls your site. short term downs arent anything too serious, ive had some.
