Got domain. I've given instructions to copywriter. Than the SEO guy will come in and change it?? Which comes 1st? I think I've done it wrong way around....???And when should the web designer come in?? There must be a certain order.....

Both are important. If you don't have any content of your website why the visitor will go there? So, the best way is that, creating content and doing SEO at the same time to get rapid boost in search engine. But of course copywriter should be first.

If copywriter understands SEO principles then there is no problem, copywriter first then SEO. Website design will impact layout of copy and vive versa, plan both together.
It is definitely the copywriter that comes first. What good is a website without a remarkable content. It is only when you have all the content ready that you begin to contain it in a website. So, a web designer or developer is needed to set up a website. Once everything is put up in the site, then you have to optimize. This is where the role of the seo guy comes into play.
To be honest, SEO is becoming almost dead, don't even worry about it. Focus on other traffic methods.
I would start off with a SEO to make sure the site in question is technically sound from an SEO perspective. The SEO would then lay out keyword targets and a link building plan. Then bring in a copywriter to work with the SEO.
You want the two to work in tandem. So that your message is SEO optimized and also so that you have copy.
I will said SEO come 1st because they know the correct way and what will impact on SEO . Copywriter might just expert in writing article but they do not know which keywords you want to place in content and what you want to focus. Most of SEO services do have their own copywriter to help you up . So i believe direct to SEO rather than hire copywriter. Understand that content is a king but if they just target wrong keywords that no conversion then no point to grab those big traffic from Google.
