Channels are designed to be used for the Webmaster.. They allow the Webmaster to break their ad campaigns into groups or separate channels. The master can than determine how areas or websites are performing or what area is getting more action. On the front end, channels have no real bearing on click performance or to improve clicks. Boulder is right, channels are only used by the publisher to track everyting. Since Google works on content, you don't choose what categories your ads are served from.
