Visit www.gfy.com it's an adult webmasterboard and it's the biggest. Many adult affiliate program owners frequent there. Just make a post with what niche your adult site is, and the owners will spam you with their programs.
...And also, about your "what will I earn with 2500-3000 uniques per day". There's a TON of variables that go into that... but the main two, are the quality of the 2.5k per day traffic, and what affiliate site you're pushing. If that traffic = smart surfer traffic, it means they're looking for free porn and chances are slim that they'll buy (TGP traffic for example is like 1:2000 signup ratio, some better, some worse). If it's search engine traffic of people looking for a specific niche (without FREE in the keywords), it could do a lot better. all depends.

www.cecash.com is one of the best adult freebie affiliates you can work with. If you plan on offering freebies I highly recommend them. It's very good for traffic that consists of freeloaders.

I also agree, check out gfy. its a forum mainly for adult webmaster's.. As far as an affiliate program goes I would try to join 1 company that offer's many different types of niche's and sites. CECash, Wegcash, AFF are all good one's cause they offer everything from free signups to pay signups and many different niche's..hope this helps
If it's adult related, check also some gambling affiliate programs. Diversify your offer. I once tried the adult business, but dropped it. In the long term, other programs pay me better, and year after year.

It all depends on the source of the traffic and the niche. If you have source search engine than you can make 10 times more than with other sources like TGP. I think that most converting and recuring niche is Celebrity but it depends. It is best when you offer free trial membership than you get a lot but also recuring memberships are good if the site is good and keep customers in. I would suggest flashcash because there is lot of niches inside including celebrity Mr Skin. PM me if you need more help
