Do a google search on your niche, see if any site on the first page offers an affiliate program. If they do then they are making money.
Well it depends on your site, but particularly for hotels, Booking are excellent for me last 4 years. For travel packages you can have a look at the different merchants in CJ. Regarding payments through paypal, I do not know such travel affiliates, but bank transfer is totally ok for me. Good luck
