In the crawl stats page on Webmaster Tools there is a table at the bottom
of the page for "The PageRank of your pages in Google". Then we have:
    High
    Medium
    Low

Does anyone know what the High, Medium and Low actually equate to in terms of real PR numbers? e.g. is Low a PR of 1-3 and Medium 4-6 etc......?

I've notice this does seem to change now and again so could give a reasonable indication of what your PR would be when they update it?

I believe so and I've heard that every PR update is every month or so, I am pretty sure.

These are not related to PR at all. It is the way of caching your site frequently. You have to set there if you need high, medium or low frequently to visit crawler on your site. People set normally "medium" to cache their site by crawler.
