    Hi..
We published 2 blogs on Dec 25th and 2nd January.

The one which was made live on 25th Dec shows (At Google Web master Tools),

    SiteMap : URLs Submitted : 163, URLs in Web index : 162

But the site which was made live on 2nd January shows,

    SiteMap : URLs Submitted : 121, URLs in Web index : 1

    Why is that ?

The sitemaps and all the URLs are fine.
What can be the reason ?

or I need to wait few more days ?

It may be a temporary glitch. I have also experienced the same and it will be corrected automatically. It may take few weeks.
You can see the indexed pages by typing site:yourdomain.com in Google search.

It's frustrating, but I've seen the same thing many times.
Google just indexes somethings quickly, and ignores other sites/pages for a while.
The site is indexed, so it's not blacklisted (like a brand new one I put up months ago - must have been the previous domain owner).
    You just need to wait

Update & resubmit your website in Webmaster tool & wait for some time to get index the website pages

Waiting is just so annoying, but there is not much else you can do.
I've had sites I put up get indexed radically different times before.
Two Halloween sites I put up for example, one was indexed in about 36 hours, the other took 3-4 weeks

If you see in the tool it will show like this but search google for that site or use some other software to check how many are indexed you can find the exact number,
