What are your actual resource requirements though, such as disk space/RAM/bandwidth? Unmetered is less likely to find but there are some providing this (some only unmetered inbound but not outbound), I would personally recommend sticking with a provider that sets limits though. Do you have a particular platform you're interested in such as OpenVZ or Xen? You might be limited by the payment methods as well, however I'm sure there are some providers that will accept what you are looking for.
KnownSRV.com - Used them for shared hosting and they seem pretty decent. Not sure about the VPS service.
