I am thinking about creating a mini video series kind of like the bonus product in this website.
    http://www.realestatearticlesplr.com

(if you scroll down to the bottom there is a product called "How to Create a Mini-Site in 30 Minutes or Less!")

It's basically a flash video series..but its somehow put together into an .exe file

Anybody know what software to use to create a product like this?

With Flash you can create .exe files, so you could always design an interface linking to your Flash videos in your course and compile it as an executable. You could then write a simple autorun.inf file and distribute them on CD if you wished to do so.. anyway, just a few ideas..

If you have an AVI or MPEG or whatever, some kind of a video file, you can use Bink and Smacker to .exe it.

Why would someone want EXE? I run Linux usually and on Windows I very rarely start EXE files if I'm not sure about its content. It might be virus.

    AVI/flash is much better...
