Underscores and dashes are recognized as a space in common search engines but dash is preferred way to separate each word as long as SEO is considered.
You can not use underscores in domain names...You can only use dashes.. In regards to creating custom URLs it makes no difference for google, they read both as space.. But for users its harder to input an underscore, so if you want users to type in the address go with dash.
