It's not completely true. Depending on the industry that you're in, the product offerings,seasonality and perhaps popularity, organic search through Google or other search engines can be higher during the weekend than the work days. Basically, there is more than one factors at play.
If you use Google Analytics, and the benchmarking tool, you can *prove* this in your specific niche. Below is Googles benchmark for all niches, and as has been guessed, traffic in general is slightly lower on weekends (in this graph 5/6/12/13/19/20 December). You can see that my site doesn't conform to the normal pattern, I imagine it could vary a lot by niche. I hope this helps.

Well, my traffic goes better in the weekends. The holiday season is now over so people are now back on surfing the internet. I can say that you just need to update your blog more frequently to get more visitors.
