I was lucky enough to start online marketing over 10 years ago and SEO when Google first got popular, so I used my own affiliate projects as a resume. Today though, it's so hard to do really good SEO for affiliate stuff so people don't really have that luxury. In my opinion, if you're looking to really have an SEO career, I'd focus on doing projects you like and getting traffic, not income. Income is nice, but if you get stuck trying to get diet pill traffic you risk never developing the skills you'll use for real clients.
