I use "Linux Quick Fix Notebook" from Prentice Hall. It is a bit old (2005) but serves the purpose.

I have bought several books, several ebooks, and could never really learn from them. Whatever I have learned on servers are from real life trial and error experiences. The good thing about linux is that when ever you get an error, just paste that error on google and you will get a million results for its solutions, and usually the 1st or the 2nd result itself will solve your problem, and I believe thats the best way to learn.

And once you get the hang of servers, everything will be quite easy. And if you don't get the hang of it, no book or no google search will help you. First you need to get used to servers, install a site, install a few software manually, configure sites manually without the help of a control panel etc to start.
