Subdomains vs. Directories

I am putting together a website for my wife. She is selling a bunch of products, and I was wondering how I should structure the site.

Which is better for SEO - Subdomains or Directories? Examples:
    category1.domain.com
    domain.com/category1/

Which one should I choose? I read subdomains are treated like new domains, so would this be good if I want to rank for each category?

I remember answering this a while ago...
    directories since:
    1. they're easier
    2. subdomains may be categorized as a different website.
    and other reasons.

I searched the thread, but couldn't find anything. Sorry if repeat question.

Thanks GM. I guess they would be easier, I never thought about what would happen when I get a lot of categories.
