yeah definitely go for a niche, I always thought a dating site for university students would be good becuase you simply cant meet every single person at uni, so a dating site would let you browse interests etc...easily and make first contact quickly. There are a lot of lonely people at uni with lots of student loan to burn! There isn't that much competition out there it seems. Oh and if you don't want to buy a script it might be possible to get a white label site and you can then be an affiliate...
