SATA and SAS are similar and are both spinning disk drives. SSD drives use flash memory instead of a spinning disk for much faster read/writes
Please go with the latest SSD drives which are updated fastest storage technology at present among servers, you will experience speedy operations with SSD drives.
Since SSD is based on flash memory, it has a much higher I/O performance compared with SAS (traditional HDD). So if you care about performance then there's no doubt that SSD would be better, but comes with a higher cost, depends on your data capacity/volume and budget.
