am I going to run into trouble with those types of domains if I make the site look like wikipedia.com too?

You would be ok with wiki (also depends on the first part of the name) but wikipedia is a trademark. Whether or not they take action against you is unknown, but they legally could.

A wiki is a word. Wikipedia is a name. Obviously wiki makes more sense and is an overall better domain of choice.
