There is a lot that you can do with a dedicated server that you couldn't do with a shared account.. I would first take care of security, install CSF or something similar. With a dedicated server you can install any software you want, and manage it however you want. There is just so much stuff that you can do with a dedicated server, that's pretty much high as you can go on hosting.

I mean what can you not do with a dedicated lol? There is just too many things.

Yes, as said above you can do a lot with your Dedicated server but because you are going to host your websites on it, first things first.. you should install all the required softwares/modules as they are on the Shared server now
    install firewall like CSF
make other security changes like suPHP, mod_security etc
    register your own name servers
migrate your accounts.. ofcourse you should install a control panel on the server if you are not familiar with linux
migrate your accounts and change the name servers on the domain registrar side.

You can then install new stuffs and test various things on your server.

Good to know :) You should get in touch with your webhost and ask them to tweak server security setting for secure hosting environment. Make sure you have strong root password for your server. You should also avoid installing unnecessary softwares and applications, always have latest security patches and update them at regular interval.
    All the Best :)
