Does Google stop crawling you after a while if you regularly submit a sitemap? Ive noticed that Google has stopped crawling me as much lately.
If you submit in webmaster tools then maybe, but if you use the wordpress sitemap plugin then it should not. I think there are other factors that determine when Google crawls you, usually is the posting rate and backlinks power.
No Google certainly will not stop crawling your site if you submit sitemaps too often. How do you know Google has stopped crawling your site? From your webmaster tools account? From your server logs? In your Webmaster Tools account go Overview and see if there are any errors with your website reported by Google. Next go to Statistics->Cawl Stats and see if there is a drop in the number of pages crawled per day. Has your site been updated lately? If you don't update regularly Google may not come back to look at your site.
Because due to inconsistancies on my site the URLs on my sitemap are different to that displayed on the site. The only URLs in google are the ones that are from the sitemap.

Wait, do you mean the only URLs in Google are from your *old* sitemap file? Have you submitted an updated sitemap file with your new URLs?
