PR changing every day? that sounds strange. what PRs are you ranging from and to? Are you actively getting backlinks?
My guess is that you are accessing your site through different data centers. Not all data centers have gone through the update yet. So one data center might bring back a 3 - the other a 5. Give it a few weeks and keep your fingers crossed for the higher PR!
