Never ever ever use Ubuntu for a server. This is a recipe for disaster. It's geared for user-friendliness rather than server power. Even Ubuntu server edition. CentOS is good, or if you really want security (but more difficult) use OpenBSD

Actually I have used Fedora core 4 to 6 for 8 years. And found it very good.I have used Fedora core for BDC,PROXY SERVER,TERMINAL SERVER,DATABASE SERVER and ASTERISK VOIP SERVER.I have no problem with my servers. The Security is good.Although you have to update the kernel for newer drivers and softwares.but the rest.NO PROBLEMS AT ALL.so UBUNTU or FEDORA?I'll go with FEDORA.

And there is one thing I have to add.Better not to use Fedora via GUI.It is best to use Terminal or CLI.
