shop articles categorizing and sorting

    Hello dear community!
    Im working on a shop where i see many common mistakes to be solved and some things I just don't know how.
    I am studying bachelor of business right now and already passed marketing... But honestly.. There werent many things you can really apply on reality. So I need your help.
    1. What do you think is the best way of sorting things in one category to make buying experience better? I thought about rating sorted or view sorten. Of course people are often going to change it to "sort by price" but from a marketing manager view what would be the best way to do?
    2. What about categorizing articles? I mean, if you have 20 Articles in "Kitchen accessiores" it doesnt really matter but if >100 its going to be not really finding-optimized is it? So ie we have in "kitchen" an X ammount of "cups". What would be the ammount where youd say - now i make an under-category for "cups"?
    3. the shop is wohnideen-mohr$de ( "$" = "." ) and its german. Theres lotta work to do like seo and usability. ie I will partly rework the layout to best usability and things like that. But please feel free to tell me what you guys think and maybe you see what i dont.

    just tell what you think, how you do categorizing and sorting in your shop, i dont need exactly a marketing strategy guide, just your opinion. In't it a common topic in e-commerce?

    Oh cmon people what is wrong with this thread?
    Ill make it simpler:
    Whats is in your opinion the best way to sort things in category?
    How many items should one category contain? (at least;max)
    Is it too bad to have many undercategories or is it actually a good thing?
