I'm hiring a freelancer to develop a new ecommerce website. Will I need to know which merchant I will use before the site is created so the processing can be implemented properly?

Definitely make sure you have all the information you want; the more accurate your details are, the more likely you'll get the perfect product. I'd recommend PayPal, though, as it's got a good, solid API for beginners, and is one of the most widely used payment gateways.
