Setting up a LAMP server from semi-scratch

    I am looking to migrate my existing website to a new box shortly as the server has got a bit messy and the easiest way to clean it (for me) is to start afresh.

    As part of that project, I wish to improve my server skills - and would like to basically set up and optimise the server myself.

    My hosts would provide me with a LAMP set up using oldish php/mysql platfoms and I would like to wipe all that, leaving just the raw Linux OS behind and then start with new Apache etc installs.

    For all my Googling - that is the bit i am stuck on. How do I reliably remove the AMP from LAMP so that I can start again.

    As the server is in a different continent from me, formatting the box and starting with a boot up disk is not an option - everything needs to be managed remotely.

    It's not critical to the site migration, just an opportunity which I would like to use to learn more about server management.
