I used the H1 tag once on my page http://www.ezfreedomain.com @ "how does it work?" and google picked this up. Should I put my targeted keywords in there or should I just leave it? From what I learned and how google already picked up and crawled my site it would be a plus to add the keywords there. What do you think?

You should put your main keyphrase between H1 tags since that's the most important one, put all the others like how does it work, why etc. between H2 tags.
I did not understand your question. But it is a good idea to optimize H1 tag. Your keywords should included in H1 tag. You cant use all your keywords. You can limit to 3 keywords. Important keyword should come first. Make it readable to users. Don't write only for search engines.
Actually, I think there has been no evidence yet if one heading tag is more important than the others, though in the first SEOmoz rank factors article, some noted that the H2 tag gives more weight than the H1 tag. I still feel that it all boils down to prominence – whichever tag (containing the target keyword) comes first in your codes is more accessible to the spiders.

My site always do well on their h1 keywords, even when not used in the title -- I haven't tested that much with h2 for that though, could you link to the page on SEOMoz?
H1 tag play very important role in SEO.. It help to tell the Search Engines what your website is all about.. You have to put targeted keywords there.. Keep it up.
Yeah, Google always consider on H1 tag and always use primary keyword in H1 tag. It goods effect on keyword ranking.
Put Mail keywords in H1 and other in separate heading tags. H1 tag should be used only one time on every page.

Hi I like finding Google’s limits. I ran a quick test to see if Google will use any Header Tag as a page title if for some reason it does not like the page title element you give it (as I thought it might). The result was if the title element is malformed, Google will use any available Header, be it a H1, H2, H3 H4 H5 or H6 as the page title. The snippet below shows Google using a H6 as the page title. Some other interesting observations to follow but for now check out how Yahoo & MSN handle a malformed title.
Of course, it would be a plus to put your keyword in H1, since H1 is the most important among headings.
