saving what i am doing with windows

hi there i want a program that saving every think i do on windows but i can turn it on and off on the keyboard when i want to. i want to make some movies to help others and add them to sites like youtube ect. so it would be good if it could save it as a movie formate as well. dose any now of any software that dose this
