I can't imagine what kind of ads would display. It will probably for restaurant booking service, take away, etc.

I don't know about internationally, but in The Netherlands the market for restaurant and hotel-sites is pretty saturated. I don't think it's a niche just waiting to be conquered.

ANY site you get to at least a 1000 visitors a day, and then start monetizing is going to help you learn about adsense (and other ways of making money). But it's wiser to start with a less crowded niche - getting those 1000 visitors a day is going to be hard anyhow. Don't make it harder on yourself by starting in a crowded space.

I'm not 100% sure if the Restaurant market is a huge earned via PPC ... I've been running a Bar Guide website for about 4 months now ... and just randomly put AdSense on every few days to test the waters ... I know this isn't the best way to test, but so far the earnings are below 4 cents per click it seems.

That's how it is with a saturated market. With good site-design and enough visitors that can still make you some money, but for someone just starting a new site - I'd recommend making something that has not been done before as often.
