Domains for example, that end with .me.uk are very cheap to buy and register but are they easy to get ranked compared to an expensive domain like .uk.com

with such a short time .co domain name able to resell at high price , that mean it really worth . Most of domain registrar start push on selling .co domain name because they believe it will replace .com one days and it better compare to other TLD domains like , .biz, .info , .org and .net.
Sorry mate you are wrong. .co is a ccTLD (country-code top level domain), while .com is gTLD (generic top level domain). .co is assigned to the Republic of Colombia, while .com is an identity for whole world! A ccTLD will never be able to take the place of .com .com is the king of TLDs!
