Start small with the basics first... Different people learn different ways... But when I started I read a couple of books. Even Search Engine Optimization for Dummies will give you a decent foundation.

Once you understand the basics, start trolling forums like webmasterworld.com, forums.digitalpoint.com, Google's Webmaster Help Forums, seobook.com, etc.

If you want a good ebook, I think Aaron Wall's SEObook is probably the best. It may seem a bit pricey but he knows his sh*t...

Find some SEOs out there who know what they are talking about like Michael Wolf, Danny Sullivan, Aaron Wall, Rae Hoffman, Venessa Fox, etc. and start following their blogs and web sites for posts on SEO.

And finally the MOST important learning will come from playing around with your own site... Make changes, wait and observe, see what happens, adjust, try something different. Experimenting with your own site is the BEST long term strategy for learning SEO.
