I'm thinking of putting together a rating/review site, but i'm not sure what i should build it on. my choice is either Drupal 5.7/6 or a pre-made Rating/review 'script'.

I'm looking for suggestions and/or demo sites, so if you know of any please post them here.

If you are looking to use Drupal that have a VotingApi that can be edited along with some CCK and views to make a really nice rating site I built a similar site. Basically there were a few hundred drivers for a company and I build a rating system so that internally the company could rate the driver per shipment.

Although the API is premade it takes some time to edit it to your needs so you will still need to do some work.
