What do you folks do about locating keywords in markets where the keywords are all but gone. I know this product I promote sells, but man, it seems like every keyword (longtail or not) has been gobbled up!

I get what you are saying, but when I write an article for this niche it always sells with the initial traffic from showing up on the front page of EA. Then they die off.

Exactly Swerd. Could not have said it better myself

On occasion I will enter a highly competitive market and its tough but if you know what to look for in a weak saturated market as opposed to a strong saturated market you can make some inroads.

If the market is saturated you should either choose another niche or choose a better way to out advertise your competitors.
