I was wondering what you all thought about making websites/blogs. For example, say that I was looking to make a health/fitness website, do you guys think its better to have one website that covers multiple subdivisions of health/fitness? These would be something like losing weight, gaining muscle, diet plans, workout programs, etc. all in the same site. So pretty much different categories of the site, each possibly promoting a product after the site was developed, or make separate websites for each category so that each site is much more targeted? Basically, what I am trying to ask, is do you think it is a better idea to have one site with sub categories that all relate to one another, or split those categories into different websites? I would say that it's better to have all under 1 site. Getting the seo done for 1 site is going to be much easier that doing 10 for example. People from different niches will also come together on 21 site and will be able to view more information on various topics, that might be of interest to them.
I would recommend putting everything on 1 site at first to gain a sense of which of your niche topics (e.g. losing weight, gaining muscle, etc.) gains the most traction. Once you've found a winner, I would then just focus on that 1 topic. As you gain more momentum and scale, I would launch separate sites for your other topics.
As previous posters have said, I would go with the authority site model. In other words all your topics on one site.

You can try to use subdomain to separate categories for example: fitness.abc.com, diet.abc.com... I think it's better to seo
A good strategy if you use the one website for all niches is to then use free Facebook Business pages that are named for the niche. Example a Facebook business page titled "Diet Plans" and another titled "Gaining Muscle". You can post content, gain fans and interact on Facebook so they get to know and trust you. You Facebook page will have a link to your website and you can drive traffic that way. Run an online contest to get fans to your Facebook niche pages. That brings new fans to your website. Don't forget to grab your Facebook URL once you have 25 fans. So instead of the URL being www.Facebook//Gaining-Muscle/934857935 it's www.Facebook//Gaining-Muscle which for SEO is great as long as "Gaining Muscle" is the keyword you're targeting.
