Question about 301 Redirects and Sitemaps

I recently combined pages from two folders on my site into a single page in a third folder. For example:

    Old Format
    /oldfolder1/filename.htm
    /oldfolder2/filename.htm

    New Format
    /seo-friendly-folder-name/seo-friendly-file-name.htm

Requests to both of the old URLs are now 301 redirected to the new URL. My question is, which of the following will make Google pick up on the changes as quickly as possible? -

    1) List only the new URLs in the sitemap (this is currently what I have)
    2) List only the old URLs in the sitemap
    3) List all three URLs in the sitemap
    4) Doesn't matter because it will take the same amount of time anyway

    Thoughts? Thanks in advance.

I would go with 1) .. pointless listed pages that do not exist anymore .. and it might be picked up quickly as it will be classed as "new" content.
