I'm not entirely sure where or how to find my wesbites PR. I know for keywords which page it ranks, but PR 0-9etc baffles me.

    Any help?

PR (page rank) and SERP (search engine ranking position) are totally diffent thing

PR N/A to PR10 is a table that Google created that mesures the impotance of the website, mainly backlinks)

you can check your website PR by using the google toolbar or go to dnscoop.com

Excellent, now I get it thanks.

I have just updated the look and all the content, will I have to wait for a google PR update for it to show links, content etc in its PR value?

Your visible Google PageRank from 0-10 is only a representation of the value given to your site. Your true "PageRank" is ALWAYS changing, it's just not always visibly different. You can install the Google Toolbar or use many other toolbars such as SEO Quake to easily view any page's PR.

Will listing the website in directories add to the PR value?

The company I am doing work for are in a quite niche market and there are limited forums to post links from.

Where else can I get back links to help with PR?

Unrelevant links help too.... I dont care what people say, unrelevant links help a great deal!

The niche is surveying equipment supply, so if there were high PR forums unrelated to the industry that allowed links, would this benefit the site?
