It's a good idea - but you may need to check if there are any privacy issues here. Do people need to be warned that the email is being tracked, in the same way that they need to be warned of cookies?
In my email client, the default behavior is not to show remote content - so pictures will not be displayed. However, this is probably not a big issue, since probably most of common users will have images enabled by default. So yes, quite a nice idea.
I know you need to have the website address in the snippet to get more users but at the same time I think it scares a lot of users away. How about slightly minimizing the font? I for one would not like to have that large image in my email, but hey, that might just be me. Also, make sure you add an "alt" tag so if the image doesn't load it won't annoy the user.
