PHP Zend Editor Problems

    Guys I have zend and when i save my files as utf 8 for encoding then reopen he files I have characters that replace my - with – that and all types of funky characters how can I resolve this?

    are changed also the default encoding to UTF-8?
    Another way is use File -> Open (Ctrl+O) select the file and there is also another option to chose the encoding
